To quote Momma Mary's first born Jonathan "Her carrot cake has ruined me on others carrot cake. I won't even get it anywhere else." He requests it for every birthday he has and Momma Mary always delivers. His little sister Amanda told us on Episode 24 that the best part of the cake is the cream cheese frosting and that Mary "is a firm believer in keeping cake in the fridge. She thinks all cake should be served cold." We couldn't agree more!
Why we think it is so extra special is not just the moist cake and to die for frosting but it's the woman behind this cake! Momma Mary was a military wife since marring Colonel Dave Williamson of the USAF in 1976. The word heroic comes to mind when discussing Momma Mary because it was her strength that navigated this family through countless moves, supporting other military spouses, organizing squadron picnics while having a career as a teacher on base.

Ingredients
2 c. sugar
4 eggs, well beaten
2 c. plain flour
2 tsp. cinnamon
1 c. pecans
1 1/2 c. salad oil
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
3 c grated carrots
Directions
Pre-heat oven to 350 degrees
Mix sugar and oil: add eggs and mix well. Combine dry ingredients and stir in. Mix until smooth. Add nuts and carrots. Bake in 3 greased 9-inch pans for 30-40 minutes.
Frosting:
1 box powder sugar
8 oz. pkg. cream cheese
1/2 stick butter softened
1 tsp. vanilla
Mix all ingredients until smooth: spread onto cake.
