We never knew a grilled cheese needed anything more than butter, bread and cheese until we tried our stepdad's favorite comfort food with a twist!

Why it's on our list


When we asked our stepdad, Drew (aka D2) what is favorite comfort food was on our Father's Day episode he said a grilled cheese with onion on it because that was how his grandma made it from him growing up. We were so intrigued and also salivating at the thought of a ooey gooey melted cheese with the umami of caramelized onions on buttery toasted bread. Why hadn't we thought of this combo before? We immediately headed to the Hey Sis test kitchen to make what we now know is the ultimate grilled cheese.


Ingredients


  • 2 slices of bread (choose your own adventure here)

  • 1 cup grated cheddar cheese

  • 1/2 of a yellow onion thinly sliced

  • Room temp butter

  • Extra virgin olive oil

  • Salt


Directions


Heat a medium pan on medium low temperature. Add a tablespoon of butter and 2 teaspoons of olive oil heat until melted and combined. Add your sliced onions and a 1/2-1 teaspoon of salt and spread them out so they don't overlap too much. Let them cook and stir occasionally. This is going to take 20-30 mins. If the onions are getting too crispy, add a tablespoon of water and stir around to coat the onions. When they onions get to a dark brown remove from pan to a small bowl.


Butter one side of one slice of bread. Place buttered side into the same pan. still over medium low heat. Add you shredded cheese to the piece of bread. Using your fingers, disperse the caramelized onions over the cheese and add more cheese on top. Take your other slice of bread and butter the outer side. Place on top of the cheese/onion stack with buttered side on the outside. Once everything starts getting melty, use a spatula to check how toasty the bread is getting. Flip when you get the desired toastyness and toast the other side. Remove to a cutting board when finished.


Cut the grilled cheese into 4 squares, just like Drew's grandma did, and prepare for your mind and tastebuds to be blown!



Serve it up!
