Momma Lynnie's Spinach Pie

Amy Epstein from S2 Ep11, fondly remembers her mother's Spinach Pie as one of her best dishes. According to Amy Epstein, Momma Lynnie was the consummate hostess with the mostess but was not the best cook. This dish however was always a winner and her children still make it today. Momma Lynnie would often make this dish as a side on Jewish Holidays along with Noodle Kugel and Cornish Game Hens. This is a classic casserole that comes together quickly and is hard to mess up! With all that cheese and butter it makes us say, in the words of Ina Garten, "How bad can that be?"
Ingredients
3 eggs
1 package frozen chopped spinach
1 pint low fat cottage cheese
1/4 lb grated cheddar
4 TLBS melted butter
3 TLBS flour
Salt & pepper (we added this because we think it belongs in most dishes)
Directions
Defrost spinach and drain, removing as much water as possible.
In a mixing bowl, combine spinach with other ingredients.
Put in greased casserole dish.
Bake at 350° for 1 hour.
*This is not in the original recipe but we suggest topping casserole with a bit more cheddar cheese. Bake until golden on top.
