It’s Momma Ashley’s granddaughters’ favorite “Lovey” recipe. (Lovey is Momma Ashley’s grandma name) It’s also a crowd pleaser when you’re entertaining mixed ages. The kids LOVE it and the adults can’t get enough! It makes a ton so you can eat one and freeze one or serve both if you’re having a big party. If you are freezing one, do not top with breadcrumbs. Freeze ½ of the breadcrumb mixture in a plastic bag.

Momma Ashley's Mac & Cheese


Ingredients


Serves 8-10

  • 4 slices Sourdough sandwich bread, torn into pieces

  • ¼ cup grated parmesan cheese

  • 1 garlic clove minced

  • 8 tablespoons butter, melted

  • Salt & Pepper

  • 1 pound elbow macaroni

  • 6 tablespoons all purpose flour

  • 1 teaspoon dry mustard

  • ⅛ teaspoon cayenne pepper

  • 4 ½ cups low-sodium chicken broth

  • 1 ½ cups heavy cream

  • 3 cups shredded sharp cheddar

  • 3 cups velveeta cheese (Freeze for 20 minutes to make grating easier or cut into small cubes)


The Good Part, Put It All Together


Directions:

  1. PROCESS TOPPING - Pulse bread parmesan, garlic and 2 tablespoons butter in food processor until coarsely ground. Put topping mixture aside to sprinkle on top, later.

  2. COOK PASTA - Bring 4 quarts water to boil in a pot and add a tablespoon salt, macaroni and cook until softened about 3 minutes. Drain pasta, then spread out on rimmed baking sheet and let cool.

  3. MAKE SAUCE - Heat remaining butter, flour, mustard and cayenne in an empty pot over medium-high heat, stirring constantly until golden and fragrant, 1 to 2 minutes. Slowly whisk in broth and cream and bring to a boil. Reduce heat to medium and simmer to thickened, about 15 minutes. Off heat, whisk in velveeta and cheddar cheese, 1 teaspoon slat, ½ teaspoon pepper until smooth.

  4. ASSEMBLE - Stir cooled pasta into cheese sauce, breaking up any clumps until well combined. Divide pasta mixture between two 8-inch baking dishes.

  5. BAKE - Adjust oven rack to middle position and heat oven to 375 degrees. Bake 20 minutes then remove and sprinkle with breadcrumb mixture. Continue to bake until crumbs are golden brown and crisp, about 20 minutes longer. Let cool 10 minutes then serve.
