Gina Clarke's Grilled Vegetable Quinoa

When you are a personal chef like Gina Clarke, who joined us on S2 Episode 4, often have left over grains from a dinner party or grilled veggies from a cocktail party and a handful of random herbs from a brunch. Here's how you make that into this most delish side or even main course!


  • 2 cups cooked quinoa

  • Any kind of veggies you have on hand to grill

  • Any kind of herbs you have on hand

  • 1 Lemon

  • Feta (optional but come on you know you want it!)


No one says it better than Chef Gina so we took her instructions for this dish straight from the episode!

"So you do your typical quinoa with vegetable stock. Make it, then you cool it. Then you take every vegetable that you've ever dreamed of that you love, and you grill it off on the grill, and you chop it really fine. You add it to your quinoa, you wake it up with every herb. Basil, mint, cilantro, parsley, parsley, chives, anything. Add all that. Add the zest of lemon. Add blueberries, craisins, and all the veg with salt and pepper."
