Cathy Yoder's Hibachi Chicken and Vegetables

When we had Cathy Yoder on the show S2, Ep 13 The Queen of The Air Fryer, Cathy Yoder, to talk about her Shempire neither of us had ever used an air fryer and we thought it was just for french fries or other fried food. Cathy really opened up our eyes to all of the possibilities with this cooking device! Cathy's Hibachi Style Chicken with Yum Yum Sauce is one of her favorites and very special since she made it for her mom before her passing two years ago.
This dish has it all! Protein, veggies and a ton of flavor. Best of all it's super easy and fast! Serve with rice or as a stand alone meal.
Ingredients
Makes 4 servings
Hibachi Chicken
2 raw chicken breast cut into bite sized pieces
1 small onion cut into slices
8 oz of mushrooms cut into fourths
2 small zucchini cut into bite sized pieces
1 tsp of ground ginger
1/4 tsp of black pepper
1 TBS of garlic powder (Whitney used 2 minced garlic cloves instead)
1/4 cup of soy sauce
2 tablespoons of olive oil
Yum Yum Sauce
1 cup mayonnaise
¼ cup of Water
1 teaspoon tomato paste or ketchup
1 tablespoon melted butter
½ teaspoon garlic powder
1 teaspoon sugar
¼ teaspoon paprika
Directions
Preheat the air fryer to 400°F/204°C for 5 minutes.
Cut up the chicken and vegetables.
Toss with 2 tablespoons of olive oil and seasoning mix.
Place the chicken, vegetables and seasoning into the preheated air fryer basket.
Cook at 380°F/193°C for 12-15 minutes. Stir at the halfway point.
While the chicken is cooking, make the yum yum sauce. Mix all the yum yum sauce ingredients together in a bowl until well combined.
Once the chicken is cooked (reaches an internal temperature of 165°F/74°C), take the chicken and vegetables out of the air fryer basket and enjoy with the yum yum sauce!
