Zesty Summer Shrimp


Why it's on our list


I grill a lot in the Summer and this shrimp is one of my absolute favorite dishes. I get compliments every time I make it and it's super easy to make. The beauty is that you can prepare the shrimp ahead of time and let them marinate for up to 8 hours. I typically marinate the shrimp in a big bowl earlier in the day. While the grill is heating up I thread the shrimp on skewers (that have soaked in water for at least 30 minutes) and throw them on the barbie for a few minutes on each side. The shrimpies are incredibly flavorful and quite zesty, hence the name!


Ingredients


  • 1 LB shrimp

  • salt & pepper

  • 3-4 cloves garlic

  • 2 TLBS Italian flat leaf parsley chopped

  • 1 TLBS lemon juice

  • 2 TLBS soy sauce or tamari.

  • 1 TLBS Italian Seasoning

  • 2 tsp dijon mustard

  • 1 TLBS Worcestershire sauce

  • 1/2 cup olive oil

  • 1/4 cup red wine vinegar

Directions


If using wooden skewers, soak in water for at least 30 minutes so they won't catch fire on the grill.


Salt & pepper your shrimp on both sides. In a medium glass bowl, combine the rest of the ingredients and whisk well. Add shrimp to the bowl, cover and marinate for 1 hour up to 8 hours. The longer you marinate, the more flavorful the shrimp.


Preheat your grill to medium high. Thread 3 shrimp per skewer. Place on the grill for 2 to 3 minutes per side until pink.


Remove and serve with lemon wedges.
