Why it's on our list


In the Shaw household growing up, this recipe was originally called "Mexican food" until 20 years ago when Colin's Hispanic wife corrected the family saying that canned chili is not Mexican food! The name changed to Shaw Style but the ingredients and specific way Momma Susan would layer up this meal has stayed the same. So much so that all 3 siblings make this recipe often for their families. What makes this recipe so satisfying is the combo of flavors and textures you get with the crunchy Fritos, the warm rice and chili, melty cheese, and the crisp veg on top! It is truly as easy as opening a can of chili!


Ingredients

  • 1 bag of Fritos - crushed up

  • White Rice

  • Canned Chili - no beans - piping hot!

  • Shredded cheddar cheese

  • Shredded iceberg lettuce

  • Diced tomatoes or pico de gallo

  • Pickled jalapenos

Directions


In a bowl, put a layer of the crushed up Fritos. Add a layer of white rice. Add piping hot chili. Important that it's hot so the cheese melts on top of it. Add cheese. Add sprinkle with iceberg and tomatoes or pico. We like it spicy so we served with pickled jalapenos on the side.
