The Perfect Green Salad

Why it's on our list

If you’re a regular to the Hey Sis, Eat This Podcast, you know that no meal is ever complete without a green salad. Perhaps it’s the French in our bloodline or our love of vinegar, but a green salad is the perfect side to complete any meal. This versatile salad is fabulous alongside an omelet for breakfast or add chicken breast, blue cheese, avocado and tomatoes for a zesty Cobb Salad lunch. But our personal favorite is simply red leaf lettuce and dressing as a staple at the dinner table. Make this dressing on a Sunday and use it all week! It last about a week.


  • 2 TBLS Champagne Vinegar

  • 1 - 2 tsp honey

  • ½ tsp salt or to taste

  • 1 raw egg yolk

  • 1 tsp Dijon Mustard

  • 1 garlic clove minced

  • ½ cup good olive oil


In a bowl, combine vinegar, honey, mustard, garlic and egg yolk and salt.

Whisk to combine.

Slowly whisk in olive oil until emulsified

Taste and add a pinch more salt if needed

While we love this salad simple, it also tastes great with the Hey Sis croutons!
