Momma St. Lori's Chicken Parm Without the Parm

The Broas sisters are major Italophiles! All three sisters studied in Florence in college so Italian cuisine is top on their list of favorite foods. However, sister Audrey claims that Momma St. Lori's Chicken Parm is better than any she ever had in Italy!
This Chicken Parm is unique because the recipe does not actually have parmesan cheese in it but gets its Italian flavors from the tomato sauce and mozzarella cheese. Courtney made it for her daughters and it was a HUGE hit! It also comes together quickly and using jarred tomato sauce makes it even easier. This one is a winner in the Hey Sis Eat This recipe book because it's family friendly, simple to make and tastes awesome!! Ciao!
Ingredients
Serves 4
4 chicken breasts
Salt & Pepper
2 eggs
3/4 C Italian Bread Crumbs
2 T. olive oil
1 ½ C spaghetti sauce
1 C mozzarella (shredded)
Directions:
Pre-heat the oven to 350 degrees.
Pound chicken breasts until same thickness.
Sprinkle with Salt & Pepper.
Lightly beat the eggs in a shallow bowl/dish. Dip Chicken in egg on both sides.
Dredge chicken in Italian Breadcrumbs. Add more bread crumbs if needed.
Heat oil in frying pan on medium-high heat. Fry chicken on each side until golden
brown. About 3-4 minutes. If pan becomes dry then add more oil.
Pour 3/4 cup of the Spaghetti Sauce in the bottom of a baking dish big enough to fit the
chicken lying flat (8x8 or 9x13).
Place each chicken breast flat in dish. Pour the remaining Spaghetti Sauce on each of
the chicken breasts.
Bake for 20 minutes at 350 degrees. Pull the pan from the oven and then take the
shredded mozzarella and place a small mound on each chicken breast.
Put the chicken back in the oven and bake for 5 more minutes to melt the mozzarella.
The Final Touches:
Serve with spaghetti, salad and garlic bread. Enjoy!!!!
