Momma Ashley's Beef Tenderloin

If you are wanting to drop some carnivore panties * this is the dish to serve! Great for a big crowd, sliced on sammies or sliced and elegantly plated for a more elevated gathering.
Momma wraps the tenderloin in bacon and grills it before finishing it off in the oven. This gives the meat the smokiness of the grill and the tender juicy pink of a medium rare roast. It’s unreal and quite impressive to the eye. Every time we take that bad boy out to the grill people start snapping photos of this carnivore's dream. It’s a little pricey to cook a whole tenderloin like this but worth every penny, we promise!

MAIN DISHES
Momma Ashley's Beef Tenderloin
Ingredients
Serves 8
4-5 pound beef tenderloin trimmed (have the butcher trim it or you can trim it yourself! With the leftover trimmed meat you can grind it with bacon to make incredible hamburger patties)
1 pound of bacon
1 head of garlic cloves peeled
1 cup of Worcestershire Sauce
¼ cup dijon mustard
Kitchen twine
The Good Part, Put It All Together
Directions:
Heat grill or grill pan to high
Pre-heat oven to 400 degrees
Remove tenderloin from the fridge and place it on a cutting board, let it sit for an hour to come to room temp
Using a paring knife cut slits all over the meat
Stuff the garlic cloves into the slits
Grind fresh pepper all over the meat
Pour a generous amount of worcestershire sauce all over the meat. Wrap in plastic wrap and marinate up to 3 hours. (You also can skip the marinating if pressed for time)
Heat Grill on high
Sear all sides of the meat around 2 minutes per side.
Remove from grill and place on a foil lined baking sheet (foil = easy clean up)
Once cooled slightly, rub dijon mustard all over tenderloin
Starting with the end of the tenderloin, wrap bacon around the meat and keep going until the bacon covers the entire piece
Tie the beef tenderloin with twine
Insert an oven safe thermometer into the center of the beef (We suggest something like THIS, it’s a game changer!)
Put in oven for 30 mins or until it reaches 130 degrees
Take out of oven and let it rest for 15 mins
Cut twine and remove bacon
Slice into 1 inch pieces if serving on it’s own and ½ in pieces for sammies
Horseradish Sauce
This is delish to serve with the beef on it’s own or as a sauce for the sammies
Serves 6
½ cup sour cream
2 tablespoons prepared horseradish
1 tablespoon mayonnaise
1 tablespoon finely chopped chives
1 teaspoon Dijon mustard
Juice of half to whole lemon
¼ teaspoon kosher salt
pinch freshly ground black pepper
Mix together and put it in a bowl with a spoon
Serve it up!
