Momma Beverly's Hot Milk Cake

While guest, Brianna Abrahms is a successful "Pie-preneur" owning multiple Winston's Pies pie shops throughout Southern California, it was Momma Beverly's Hot Milk Cake that sisters Brianna and Brittni remember as one of their top sweet treats from childhood. There was so much sweetness in this household that not only inspired Brianna to open a pie shop but she still relies on Beverly and Brittni as collaborators, critics and confidants when it comes to new recipes. Our personal opinion is that Winston's Pies needs a Hot Milk Cake inspired pie but until then we encourage you to try this recipe and let us know your thoughts.
The fun part of this cake is you can use any frosting that you like! Vanilla, chocolate, strawberry or whatever you're in the mood for. Because we are chocolate lovers, we have chosen to include a typical chocolate frosting but feel free to change it up!
Ingredients for cake:
3 eggs beaten
add 2 cups sugar (beat hard)
2 c all purpose flour sifted
2 tsp baking powder
dash of salt
1/4 lb butter (add to milk)
1 cup milk (heat until scalded)
1 tsp vanilla
350 degrees (20 min)
Ingredients for chocolate frosting:
1 cup softened butter
1/2 cup cocoa powder sifted
5 cups powdered sugar
1 teaspoon vanilla
3-4 tablespoons milk
Directions for Cake:
Heat oven to 350 degrees
In a large mixing bowl or electric mixer, beat 3 eggs. Add sugar and beat hard. Add sifted flower to the eggs and sugar along with baking powder, a pinch of salt.
In a saucepan over medium-high heat, heat milk until scalded. Add butter and vanilla and stir.
Once milk has cooled slightly, add to flour and egg mixture to greased baking dish.
Bake for 20 minutes.
Let cake rest and ice with frosting when cool.
Directions for Frosting:
In large bowl whip butter and cocoa together until smooth. Stir in vanilla and powdered sugar. Slowly add milk until the frosting reaches desired consistency. Scrape sides of bowl and continue to whip again until light, fluffy and smooth, 1-2 minutes.
