Daddy Ashley's Grilled Peaches with Mascarpone Cream

This irresistible recipe is a staple at Daddy Ashley’s during peach season. Glenn and Drew (our dads) handpick the ripest peaches from the farmer’s market, then grill them to perfection. They serve the warm peaches with a light, fluffy mascarpone cream then finish with flakey sea salt. It’s a delicious, easy-to-make treat that’s perfect for celebrating Dad or Dads and making summer memories together.

Ingredients
For the mascarpone cream:
1 cup mascarpone cheese
1/2 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
For the grilled peaches:
4 ripe peaches, halved and pitted
2 tablespoons olive oil or melted butter
1 teaspoon vanilla extract (optional)
1 tablespoon honey or brown sugar (optional)
Directions
Make the mascarpone cream:
In a mixing bowl, combine mascarpone cheese, powdered sugar, and vanilla
In a separate bowl, whip the heavy cream until soft peaks form
Gently fold the whipped cream into the mascarpone mixture until smooth and creamy
Prepare the peaches:
Preheat the grill to medium-high heat
Brush the peach halves with olive oil or melted butter. Optional: drizzle with honey or sprinkle with a little sugar for extra caramelization
Grill peaches cut side down for about 3-4 minutes until grill marks appear, then flip and cook for another 2-3 minutes
Assemble the dessert:
Place grilled peach halves on serving plates
Spoon a generous dollop of mascarpone cream over each peach
Optional: garnish with flakey sea salt
